• It has been the preferred nutrient addition for professional and hobby winemakers for three decades.
• During the cell growth and metabolization of sugars that takes place in every fermentation, yeast cells require an array of trace elements, vitamins, and compounds that can be assimilated from their environment in order to carry out their basic functions of life.
• However, grape musts and other fruit fermentations are often deficient in several of these nutrients. Nutrient deficiency can lead to disrupted or incomplete fermentations, off-flavors and aromas, and diminished stability of the finished wine.
