- Mash and run off normally to the copper/kettle or to a special wort holding tank. Adjust temperature of the wort in the cooper/holding tank to 65°C.
 - This temperature is important. (For temperatures less than 65C, it is suggested to either double the contact time, or double the dose rate for each 10°C drop in temperature).
 - Add Lo-Carb Enzyme at the rate of 30 gm to 60 gm per 50 litre to the wort (depending on the degree of final attenuation required). Add when pitching the yeast.
 - IMPORTANT; Due to a greater conversion of sugars, fermentation time may be extended by several days when fermenting below 35°C. It is highly recommended to check the hydrometer (FG) reading several times prior to bottling or canning the beer.
